If you haven't read my post about making cashew milk, I'll fill you in. I bought a $7.99 bag of raw cashews at Whole Foods, hoping to use it to make enough of both cashew milk and cashew butter for the week. Eight bucks for both ain't bad.
My cashew milk turned out great. See here. However, I might have made too much of it, when I could have used another half cup of the cashews to help the nut butter blend better. Try saying those last four words 5 times fast. ;)
So the cashew butter was tougher to make because I only used about 2.15 cups of cashews. This made it hard for the Vitamix to blend it consistently because I kept having to scrape down the sides.
Even so, by the time my patience ran out I had a smoothish and delicious cashew butter.
I think it's safe to say I pretty much accomplished my goal and can tweak it next time for better results.
